Lazy morning at home here today, which was much needed.  My daughter took a super long nap and I actually napped too, which I never do.  Somedays though, you have to put away the to-do list and take a nap.  Being overly exhausted is never helpful for anyone.  I get irritable and am less patient.  The hour-ish nap I got today was perfect.  I am now able to be more productive and work through my to-do list without as much caffeine.

My self-instated bedtime of 9-9:30 is going ok.  Last night I was in bed at 9:37 pm.  So I’m getting close.  In my defense though, with our unexpectedly busy weekend, I wanted to catch up and watch Grey’s Anatomy after doing laundry and dishes.  So, for most normal nights, going to bed earlier shouldn’t be a problem.  For those of you who haven’t read some of my other posts, my daughter has been struggling with the time change.  She used to get up between 5-5:30 am everyday.  Now, it’s 4-4:30 am and it’s nearly impossible for her to go back to sleep.  Plus, if I did get her back to sleep, then it throws her daily schedule off, which is another (bigger) problem then the early wake up call.

I have decided to stop fighting it for now and adjust to her.  I shouldn’t expect her to be able to figure it out, I need to just deal with what is in front of us.  She is going to bed early (laying down at like 6:30, asleep by 7 pm), which is right on schedule for her pre-time change schedule.  It isn’t her fault and trying to keep forcing her to adjust by taking away that hour at bedtime hasn’t worked yet.  So, early to bed, early to rise here!

I actually made this last week but didn’t get a chance to post until now.  Today’s Meatless Monday recipe may or maynot appear tomorrow.  I’m trying a crockpot mac & cheese recipe that takes 3 hours on low.  I just got it started for dinner.  (Early dinner here too!)

This was actually my first ever chia pudding.  I was searching some of the chia pudding recipes and found most of them were milk &/or fruit based.  I decided to use V8 Peach Mango juice as my base and add some frozen mango into the mix for some substance.  It turned out fabulous!

Mango Chia Pudding
Ingredients:
1/2 cup Peach Mango V8 Fusion 100% juice (or similar)
1/2 cup frozen (or fresh) mango chunks
2 1/2 T. Chia seeds

Directions:
Stir all ingredients together and allow to sit in the refrigerator for several hours (at least 3) or overnight.  Stir and eat! Enjoy!
