Wednesday! It’s day 2 of our new back-to-school schedule. I am anticipating both of my kids to be burnt out today after school. Day 2 is always tough. They are going to drag and be little crabby pants. To help me and them, I made some Triple Chocolate Cookies. Seriously, they are soooo good! I will admit, I ate 3 already today!
Triple Chocolate Cookies
1 box of chocolate cake mix
2 Tbls. flour
1/2 cup vegetable oil
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
—- and powdered sugar, for rolling the cookies in
1. First things first, turn on your oven to 350 to preheat.
2. Combine cake mix, flour, oil, and eggs. Mix well. Add both types of chocolate chips. Mix well.
3. Place about 1/4 cup powdered sugar in a bowl. (You may need to add more later). Start scooping out your cookie dough in your normal fashion. I have a Pampered Chef scoop that works beautifully. If you don’t have one of these, use some spoons and drop the cookies into the powdered sugar, roll them around a bit, and then place on your cookie sheet.
4. Bake at 350 F for 11-13 minutes. The cookies should crack and should look “set.” Remove from oven. Allow to cool a couple minutes on the cookie sheet. Remove and allow to cool. EAT! or store in an airtight container. (With the box of cake mix I used, I made 18 cookies).
