Meatless Monday! Today the hubby and I had omelets and smoothies for lunch. He made the omelets and I made the smoothies. I’ve been making green smoothies for quite some time. Years to be exact. They are so delicious you forget how healthy they are. Shove some spinach or kale into a smoothie and it’s like you just consumed a salad.
I like to make smoothies for my kids too. It’s a great and easy way to get some extra fruit and spinach in them without complaints. My kids actually consider it a treat! WINNING!
This is not overly sweet and made two servings (it filled 2 mason jars, which is approximately 4 cups of smoothie). If you only want one smoothie, cut all ingredients in half. If you are looking to have a little sweeter smoothie, slightly decrease the amount of spinach and add a couple extra chunks of mango and pineapple into the blender. Smoothies are not an exact science, there is a lot of wiggle room!
1 cup frozen mango chunks
1 cup frozen pineapple pieces
2 cups spinach
1 cup water
1/2 cup frozen orange juice concentrate
**You can substitute the water and OJ concentrate for regular orange juice (2 1/4 cups)
Place all ingredients in the blender. Blend on high until all ingredients until well blended.
Notes: I like using frozen fruit as it makes the smoothies nice and cold without adding ice. I also like to use frozen orange juice concentrate as we don’t always have orange juice in our fridge. By leaving a container of frozen orange juice concentrate in my freezer just for smoothies, I know I will always have it to mix in. Feel free to substitute orange juice for the water and the frozen orange juice concentrate.
