Another Meatless Monday. I really love quinoa. It’s so versatile and easy to make. It comes together with practically anything and any flavor you throw with it. The recipe below is good as is. It can be a main course along with some other fruit or veggie side. Eat it hot or cold, it really doesn’t matter. Healthy and quick. Double win in my book.
Quinoa with Beans & Spinach
1 1/2 cups dry quinoa
3 cups water
3 tsp vegetable bouillon
1 1/2 cups diced carrots
1 can (15 oz) Great Northern beans, rinsed and drained
2 cups spinach, chopped
1. Rinse and drain quinoa. In a medium pot add quinoa, water, vegetable bouillon, and carrots. Bring to a boil.
2. Reduce heat to a simmer and cover. Allow to simmer 15-20 minutes (until all the water has been absorbed).
3. Add beans (that have been rinsed and drained). Chop spinach and place in warm quinoa. The warmth of the quinoa will “wilt” the spinach.
4. Serve as is, add a bit of salt and pepper, or cheese (feta, taco cheese, etc…)
Notes: You can substitute vegetable broth for the the water and the bouillon.
