I’m finding it slightly ironic that my Tuesday Crockpot meals are usually meat-centered after having a Meatless Monday. Ehh… Well, I am not a vegetarian, I just don’t mind eating vegetarian on a more regular bases. I read awhile back that people who eat mostly vegetarian with some meat now have a title of “flexitarian.” Fancy huh?
Back to the meatballs, they are easy to make and tasty. The recipe I decided to try called for 3 ingredients for these BBQ meatballs. Couldn’t be any easier could it?
Crockpot BBQ Meatballs
Ingredients:
1 package frozen meatballs (I used a package of plain beef)
1.5 – 2 cups BBQ Sauce (I used Sweet Baby Rays)
1.5 – 2 cups grape jelly
Directions:
1. Place meatballs in the crockpot. Top with BBQ sauce and grape jelly. Cook on High for 2-3 hours. (The amount of BBQ sauce and grape jelly will determine how much gravy sauce you will have left over. I would suggest starting with about 1.5 cups of each and increasing the amount later if needed.)
2. At about 2 hours you can stir and determine whether or not you need more of the BBQ sauce and grape jelly. If so, add equal amounts to increase your gravy/sauce. Meatballs are done when they are heated throughout. Serve as an appetizer, over rice, or with mashed potatoes.
Notes: Pre-packaged meatballs are not meant to sit in the crockpot all day long. They will dry out and not taste very good. I recommend only cooking on High for 2-3 hours or only Low for 4-5 (preferably high).
