Meatless Nachos

It’s another Meatless Monday at Eat, Drink & DIY!  I am really starting to love my Meatless Mondays.  It makes the start of the week easy.  No thinking about defrosting some frozen meat in time.  It’s been an easy way to ease back into the week.

I had some leftover taco fixings from having family over for pork tacos on Friday night.  As mentioned several times before, I love the combo of onion, cilantro and lime.  Seriously.  It’s the best!

I mixed up these meatless nachos for lunch today.  Fabulous, easy, and cheap!  Gotta love throwing a frugal meal into the mix.  Plus it’s delicious and decently healthy!  I used my favorite Freshware 3 Compartment Bento Lunch Boxes to package it all up into.  Seriously, what’s not to love about these things?

Meatless Nachos
Ingredients:
1/2 cup pinto or black beans, rinsed and drained (if using canned)
1/8 cup shredded cheese
diced tomato
diced onion
cilantro
lime juice
tortilla chips

Directions:
1. Rinse and drain your beans.  Dice your tomato and onion.
2. If taking to work, don’t bother trying to warm the beans up, it’s just as good cold.  If eating at home, warm the beans, add your toppings and eat!

Notes:  Add any additional toppings you like: sour cream, salsa, lettuce, spinach, etc..
Also: it is good cold, so mixing it up more like a salad that you scoop up with chips is an easy lunch to bring to work.
