Snacks, snacks, snacks; my boys always want snacks. We do a lot of fruit and veggies around here, but they definitely love their granola bars. I’ve been trying to watch the added sugar content of snacks purchased. I like that you can control sugar content by the ingredients you choose. A friend passed this recipe on to me awhile ago and my boys (and husband) LOVE them! Most people make this or a similar recipe into balls, but for little fingers and easy storage we like to make them into bars.
I usually triple this recipe since I guess while I’m at it, I might as well go big. Though honestly a triple batch doesn’t even fill the cookie sheet I use. Enjoy!
1c. Oatmeal (rolled oats)
1/2 c. Peanut Butter (we use crunchy – but your choice!)
1/2 c. Ground Flax
1/2 c. Chocolate Chips
1/3 c. Honey
1 tsp. Vanilla extract
Just mix them up and spread mixture out onto a cookie sheet. I lay down parchment paper to prevent it sticking too badly. Then I put the pan into the fridge for an hour….or a day. Take them out, cut them up and they’re ready!
